Keto Low Carb Garlic Butter Croutons

Ingredients

2 cups shredded mozzarella cheese

3 tbsp cream cheese

2 medium eggs

1/2 cup blanched almond flour

1/4 cup coconut flour

1 tsp baking powder

1/2 tsp Xanathan Gum

1/2 cup butter

2 tsp garlic powder

Instructions

Preheat oven to 400 F and line baking sheet with parchment/wax paperMelt the mozzarella and cream cheese in a microwavable bowl

Stir the cheeses until combined. In a mixing bowl, add almond and coconut flour, baking powder, Xanathan Gum, and eggs to the cheese mixture and stir thoroughly

Remove dough from bowl and place on the pan and flatten with your palms until you’ve made a rectangle. Brush the top with 2 tbsp of melted butter. Sprinkle with 1 tsp of garlic powder. Bake for 10 minutes, or until golden brown.

Remove from over and let cool for 10 minutes. Slice into small crouton-like squares. Drizzle the tops with remaining butter and rest of the garlic and bake for another 15 minutes or until golden brown (or desired level of “crunchiness”).
